  • 1 cup Bisquick All-purpose baking mix.
  • 1 lb cooked sausage Use fully cooked sausage.
  • 4 eggs, beaten
  • 1 cup shredded Cheddar cheese Can substitute with mozzarella or pepper jack.

Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, combine the Bisquick, cooked sausage, beaten eggs, and shredded Cheddar cheese. Mix until well combined.
  3. Pour the mixture into greased muffin tins, filling each cup about 2/3 full.
  4. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow to cool slightly before serving.

Notes

Sausage muffins are delicious when served warm. You can add hot sauce or your favorite condiment for extra flavor. They can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
