Ingredients
  

Main Ingredients
  • 400 ml coconut milk
  • 2 cups glutinous rice flour Essential for texture
  • 3/4 cup sugar Adjust according to taste
  • 1/2 can condensed milk Use dairy-free alternatives if needed
  • 1 cup fresh milk or evaporated milk Can be substituted with dairy-free alternatives
  • 3 pcs eggs
  • 1/4 cup melted butter
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • to taste Grated cheese (toppings) Add on top before final baking

Method
 

Preparation
  1. In a bowl, combine all the ingredients except the cheese. Mix well until all are combined.
  2. Grease your baking pan or llanera, and line it with parchment paper or banana leaves.
  3. Pour the bibingka batter mixture into the prepared pan.
  4. Preheat the oven to 150°C (300°F) for about 10 minutes.
Baking
  1. Bake for 30 minutes.
  2. After 30 minutes, remove from the oven and top with grated cheese.
  3. Return to the oven and bake for another 10 minutes.
  4. Once done, slice into your desired size and serve.

Notes

Royal Bibingka is best served warm. For extra flavor, add toppings like grated coconut or more cheese. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for longer storage.
