  • 2 lbs beef stew meat Beef chuck or similar cut is preferred.
  • 1 large onion, diced
  • 3 cups beef broth Low-sodium broth can be used.
  • 1/4 cup tomato paste
  • 1/4 cup paprika Hungarian paprika is recommended.
  • 2 cups Spätzle (German egg noodles) Prepared according to package instructions.
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Cooking
  1. Brown the beef and onions in a large pot over medium heat.
  2. Stir in the tomato paste and paprika until well combined.
  3. Add the beef broth, cover the pot, and let it simmer for 1.5–2 hours until the meat is tender.
  4. Cook the Spätzle according to package instructions.
  5. Serve the goulash with the cooked Spätzle on the side.
  6. Garnish with fresh parsley before serving.

Notes

For extra flavor, you can add bell peppers or carrots to the stew. Always taste the goulash before serving; adjust the seasoning with salt and pepper as needed. If you prefer a thicker sauce, let the goulash simmer uncovered for the last 30 minutes.
