Ingredients
  

For the chicken drumsticks
  • 6 pieces chicken drumsticks
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt plus a pinch for salad
For the mashed potatoes
  • 3 cups potatoes, peeled and cubed
  • 3 tbsp butter
  • 1/2 cup milk or cream substitute with chicken broth for a creamy texture
  • 1 tsp salt to season mashed potatoes
For the creamy cucumber salad
  • 1 cup cherry tomatoes, halved
  • 1 cucumber chopped
  • 1/4 cup sour cream or plain yogurt
  • 1 tbsp mayonnaise
  • 1 tsp lemon juice
  • A pinch n/a salt and pepper to taste

Method
 

Preparation
  1. Toss the drumsticks with olive oil, garlic powder, paprika, salt, and pepper. Let them rest for 10 minutes.
Cooking Chicken
  1. Grill or bake the drumsticks at 400°F (200°C) for about 30-35 minutes, turning halfway until the skin is golden and slightly crispy.
Preparing Mashed Potatoes
  1. Boil the potatoes for about 15 minutes until soft, then mash with butter and milk until smooth. Season lightly with salt.
Making Creamy Cucumber Salad
  1. In a bowl, mix the chopped cucumbers, halved cherry tomatoes, sour cream, mayonnaise, lemon juice, salt, and pepper. Toss gently to combine.
Serving
  1. Serve the grilled drumsticks with the mashed potatoes and creamy cucumber salad.

Notes

For more flavor, let the chicken marinate longer; an hour is suggested. For fluffier mashed potatoes, ensure you drain the potatoes well before mashing.
