Ingredients
  

Main Ingredients
  • 4 slices large beef slices (such as flank steak) Use thinly sliced beef for easier rolling.
  • 4 tablespoons mustard You can experiment with different mustard varieties for varied flavors.
  • 4 slices bacon
  • 4 pieces pickles (sour or dill) Try sweet or spicy pickles for a different twist.
  • 2 to taste Salt and pepper Season to your preference.
Vegetable Ingredients
  • 2 pieces onions, sliced
  • 3 pieces carrots, chopped You can add shredded carrots or chopped mushrooms for different variations.
Cooking Ingredients
  • 2 cups beef broth Vegetable broth or chicken broth can be used as a substitute.
  • 1 cup red wine (optional) It's optional; you can use additional beef broth instead.
  • 2 tablespoons vegetable oil
  • 1 tablespoon flour (for thickening, optional) Mix with a little water to create a slurry if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lay out the beef slices flat and spread mustard on each slice.
  3. Place a slice of bacon and a pickle on each beef slice.
  4. Roll the beef tightly around the fillings and secure them with toothpicks or kitchen twine.
  5. Season the outside of the rolls with salt and pepper.
Cooking
  1. In a large oven-safe skillet, heat the vegetable oil over medium heat and brown the rouladen on all sides.
  2. Once browned, remove the rouladen and set them aside.
  3. In the same skillet, sauté the sliced onions and chopped carrots until they are softened.
  4. Return the rouladen to the skillet and add the beef broth and red wine.
  5. Bring everything to a boil, then cover and transfer the skillet to the oven.
  6. Braise for about 1.5 to 2 hours, or until the meat is tender.
  7. Optionally, mix flour with a little water to create a slurry and add it to the gravy to thicken it before serving.

Notes

Serve German Roll-Ups with mashed potatoes, noodles, or sauerkraut. Add a simple green salad or steamed vegetables for a complete meal. Pour some of the delicious gravy over the roll-ups for extra flavor. Let them cool completely for storage; they last up to 3 days in the refrigerator and can be frozen.
