Ingredients
  

Pancake Mixture
  • 2 cups grated potatoes Squeeze out excess moisture for crisper pancakes.
  • 1/2 cup grated onion
  • 1/2 cup all-purpose flour Add more if the batter is too runny.
  • 2 large eggs
  • 1 teaspoon baking powder

Preparation
  1. In a bowl, mix grated potatoes and onion.
  2. Add flour, eggs, baking powder, salt, and pepper; mix well.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Drop spoonfuls of the mixture into the skillet, flattening them gently.
  3. Fry until golden brown on both sides, about 3-4 minutes per side.
  4. Drain on paper towels and serve warm with applesauce or sour cream.

Notes

Make sure to squeeze out excess moisture from the grated potatoes for crisper pancakes. Adjust the seasoning to your liking; you can add garlic powder or herbs for extra flavor. If you want to add a variation, consider shredded carrots or zucchini.
