  • 2 pieces salmon fillets
  • 300 g baby potatoes
  • 1 bunch asparagus
  • 2 cloves garlic (minced)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup grated cheese (for topping)
  • to taste salt
  • to taste black pepper
  • to taste fresh parsley (chopped)

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, toss the baby potatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20 minutes until they are tender and golden.
  3. While the potatoes are roasting, season the salmon fillets with salt and black pepper.
Cooking
  1. In a hot pan, sear the salmon for 3–4 minutes on each side until they are nicely browned.
  2. Add butter and minced garlic to the pan, spooning the melted mixture over the salmon as it cooks.
  3. After searing, add the asparagus to the pan or place it on the baking sheet in the oven for 8–10 minutes until it is crisp-tender.
  4. Sprinkle grated cheese over the salmon and let it melt slightly.
Serving
  1. Serve the salmon with the roasted potatoes and asparagus, garnished with fresh parsley. You can also add a splash of lemon juice for extra freshness.

Notes

Make sure the pan is hot before adding the salmon for the best sear. You can use other vegetables, like broccoli or green beans, if you prefer. For an extra kick, add a dash of red pepper flakes to the garlic butter. To store leftovers, place them in an airtight container in the refrigerator for up to 2 days.
