  • 2 each egg whites Make sure egg whites are at room temperature.
  • 1 cup corn syrup
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional) Can be replaced with dried fruits for variations.

Method
 

Preparation
  1. In a medium saucepan, combine the corn syrup and sugar and cook over medium heat until the sugar has dissolved.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. Slowly pour the hot syrup mixture into the egg whites while continuously beating.
  4. Continue beating until the mixture is thick and holds its shape.
  5. Stir in vanilla extract and nuts if using.
  6. Drop spoonfuls of the mixture onto wax paper and let them cool until set.

Notes

To store Divinity Candy, keep it in an airtight container at room temperature. Avoid putting in the fridge, as moisture can make the candy sticky. It can last up to two weeks if stored properly. You can also add food coloring for a colorful twist.
