- In a large bowl, mix the hash browns, cooked ground sausage, and shredded cheese.
- In another bowl, beat the eggs and whisk in the milk, salt, and pepper.
- Spray the inside of the crockpot with cooking spray.
- Layer half of the hash brown mixture in the bottom of the crockpot.
- Pour half of the egg mixture over the top.
- Repeat with the remaining hash brown mixture and then the egg mixture.
Cooking
- Cover the crockpot and cook on high for 3-4 hours or on low for 6-8 hours.
Notes
Serve the casserole hot with fresh fruits, simple salad, or a dollop of salsa or sour cream. You can add vegetables such as bell peppers or onions for extra flavor. For a spicier version, use spicy sausage or add jalapeƱos. The casserole can be stored in an airtight container in the refrigerator for 3-4 days or frozen for longer storage.
