  • 2.5 lbs baby Yukon gold potatoes, quartered
  • 4–5 slices bacon, fried, chopped, and set aside
  • 2 tablespoons bacon grease (reserved from frying)
  • ¾ cup chicken broth
  • 3 tablespoons Ranch Dressing Mix
  • to taste Dried parsley, for garnish (optional)

Method
 

Preparation
  1. Wash and quarter the baby Yukon potatoes. Place them directly into the crock pot.
Assembly
  1. Pour chicken broth evenly over the potatoes. Sprinkle the chopped bacon pieces on top, then drizzle with the reserved bacon grease for extra flavor. Evenly sprinkle the Ranch Dressing Mix over the top.
Cooking
  1. Cover with the lid and cook on high for 210 minutes (3.5 hours) or low for 360 to 420 minutes (6–7 hours), until the potatoes are fork-tender.
Serving
  1. Gently toss everything together before serving to ensure all the flavors are well distributed. Garnish with dried parsley for a pop of color and freshness.

Notes

For a cheesy twist, sprinkle shredded cheddar cheese during the last 15 minutes of cooking. Add green onions or chives before serving for extra flavor. Store leftovers in an airtight container — they reheat beautifully for breakfast or lunch the next day!
