  • 30 g fresh parsley, finely chopped Use fresh herbs for the best flavor.
  • 3 cloves garlic, minced
  • 1 piece red chili Adjust quantity to taste; remove seeds for milder flavor.
  • 5 g dried oregano
  • 60 ml vinegar
  • 120 ml olive oil Slowly add while stirring.
  • 5 g coarse salt Adjust to taste.
  • to taste none Black pepper Add according to preference.

Method
 

Preparation
  1. Finely chop the parsley, garlic, and chili.
  2. Add everything to a bowl along with the oregano, salt, and pepper.
  3. Pour in the vinegar and mix well.
  4. Slowly add the olive oil while stirring.
  5. Let it rest for at least 20 minutes so the flavors can blend.

Notes

Best served with grilled meats, as a dip for bread, or as a dressing for roasted vegetables. Store in an airtight container in the refrigerator for up to 1 week. The flavors may intensify over time; stir before serving again. For variations, consider adding shallots, cilantro, or lemon juice.
