- In a large frying pan or wok, heat the sesame oil over medium heat.
- Add the mixed vegetables and stir-fry for about 3-4 minutes, until they are tender.
- Next, add the shredded chicken and cooked rice to the pan. Stir well to combine all the ingredients.
- Pour the soy sauce over the mixture and continue stirring for another 2-3 minutes, until everything is heated through.
- Season with salt and pepper to taste, and sprinkle the chopped green onions on top.
Notes
Best served warm. Garnish with extra green onions or a sprinkle of sesame seeds. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for up to a month.
