  • 2 cups cooked rice Use leftover rice for best results.
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (peas, carrots, corn) Fresh or frozen.
  • 1/2 cup soy sauce Adjust to taste.
  • 2 tablespoons sesame oil
  • 2 each green onions, chopped For garnish.
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large frying pan or wok, heat the sesame oil over medium heat.
  2. Add the mixed vegetables and stir-fry for about 3-4 minutes, until they are tender.
  3. Next, add the shredded chicken and cooked rice to the pan. Stir well to combine all the ingredients.
  4. Pour the soy sauce over the mixture and continue stirring for another 2-3 minutes, until everything is heated through.
  5. Season with salt and pepper to taste, and sprinkle the chopped green onions on top.

Notes

Best served warm. Garnish with extra green onions or a sprinkle of sesame seeds. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for up to a month.
