Preparation
- Prepare the sponge cake and let it cool completely.
- In a bowl, mix the quark cheese with sugar and vanilla extract until smooth.
- In another bowl, whip the cream until stiff peaks form.
- Dissolve the gelatin in water and allow it to cool slightly before mixing it into the quark mixture.
- Gently fold the whipped cream into the quark mixture.
- Place the sponge cake on a serving plate and pour the quark mixture over it, spreading evenly.
- Refrigerate for at least 4 hours or until set.
Serving
- Serve chilled, optionally garnished with lemon zest.
Notes
Store any leftovers in the refrigerator, covered with plastic wrap or in an airtight container for up to 3 days. You can make this cake a day in advance.
