Zucchini Hamburger Casserole

  • 2 medium zucchinis, sliced
  • 1 pound ground beef
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Olive oil for frying

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and brown the ground beef, seasoning with salt, pepper, and Italian seasoning.
Layering
  1. In a baking dish, layer half of the zucchini slices, followed by half of the cooked ground beef, and half of the marinara sauce.
  2. Next, add half of the cottage cheese and sprinkle with half of the mozzarella cheese.
  3. Repeat the layers with the remaining zucchini, ground beef, marinara sauce, cottage cheese, and mozzarella cheese.
Baking
  1. Cover the dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  3. Let it cool for a few minutes before serving.

Notes

Serve hot, garnished with fresh herbs like basil or parsley. Pairs well with a simple side salad or garlic bread. To store, let cool completely and refrigerate or freeze in an airtight container.
