  • 2 medium zucchinis, sliced Pick firm, fresh zucchinis for the best texture.
  • 2 cups shredded cheese Cheddar or mozzarella works well.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes Optional
  • Salt and pepper To taste
  • Olive oil For cooking
  • Italian seasoning Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add ground beef and cook until browned. Season with salt, pepper, and Italian seasoning.
  4. In a baking dish, layer the sliced zucchini, followed by the cooked beef mixture. If using, add diced tomatoes on top.
  5. Sprinkle shredded cheese evenly over the top.
  6. Bake in the preheated oven for 30-35 minutes or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes, then serve warm.
