Ingredients

  • 2 medium medium zucchini, grated
  • 0.5 teaspoon salt to draw out moisture from zucchini
  • 0.5 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil for frying

Preparation
  1. Grate the zucchini and place it in a bowl. Sprinkle with salt and let it sit for about 10 minutes to draw out moisture.
  2. After 10 minutes, use a clean kitchen towel to squeeze out excess moisture from the zucchini.
  3. In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, garlic powder, and black pepper. Mix until all ingredients are well combined.
Cooking
  1. Heat olive oil in a frying pan over medium heat.
  2. Drop spoonfuls of the zucchini mixture into the pan, flattening them slightly with a spatula.
  3. Cook for 3-4 minutes on each side or until golden brown.
  4. Remove from the pan and drain on paper towels before serving.

Notes

Make sure to squeeze out as much moisture as possible from the zucchini for crispy fritters. Customize with fresh herbs or other vegetables if desired. Bake instead of fry for a healthier option.
