  • 2 medium Potatoes, diced Use any variety of potatoes.
  • 1 medium Onion, chopped Sauté until translucent.
  • 4 cups Vegetable broth Can substitute with chicken broth.
  • 1 cup Heavy cream For added richness.

Method
 

Preparation
  1. In a pot, sauté chopped onion until it is translucent.
  2. Add diced potatoes and corn, and stir for a few minutes.
  3. Pour in vegetable broth and bring it to a boil.
  4. Reduce the heat and let it simmer until the potatoes are tender.
  5. Stir in heavy cream and season with salt and pepper.
  6. Serve hot.

Notes

Winter Chowder can be served in individual bowls, topped with fresh herbs if desired. It pairs well with crusty bread or crackers. To store, let it cool completely, transfer to an airtight container, and keep in the refrigerator for up to three days or freeze for up to three months.
