Ingredients
  

For the cheesecake mixture
  • 8 oz cream cheese, softened Ensure it is softened to avoid lumps.
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup raspberries (fresh or frozen) If using frozen, thaw and drain them before adding.
For the coating
  • 1 cup white chocolate chips Use high-quality chocolate for better flavor.
  • 1 cup graham cracker crumbs Can substitute with chocolate cookie crumbs for variation.

Method
 

Preparation
  1. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Gently fold in the raspberries.
  3. Roll the mixture into small balls and then coat them in graham cracker crumbs.
Coating
  1. Melt white chocolate chips in a microwave or double boiler.
  2. Dip each ball into the melted white chocolate, then place on a baking sheet lined with parchment paper.
Chilling
  1. Refrigerate for at least an hour before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to a week. Optional: drizzle with melted white chocolate or add fresh raspberries for decoration. Can freeze when separated by wax paper.
