  • 1 cup cottage cheese Choose a low-fat version if desired.
  • 1 can white beans, drained Any white beans will work, such as cannellini or navy.
  • 1/2 cup chicken broth Ensure it’s gluten-free if needed.
  • 1/4 cup green chiles Adjust amount based on heat preference.
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup mozzarella cheese Shredded or sliced for topping.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cottage cheese, white beans, chicken broth, green chiles, cumin, garlic powder, salt, and pepper.
  3. Pour the mixture into a baking dish.
  4. Top with mozzarella cheese.
Baking
  1. Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
Serving
  1. Serve warm, optionally with fresh cilantro, avocado slices, or a dollop of sour cream.

Notes

To store leftovers, let the bake cool completely. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Thaw in the fridge overnight before reheating. For extra flavor, consider sautéing some onions and bell peppers before adding to the mixture. Adjust spices for heat preference. You can substitute ground turkey or beef, or make it vegetarian by using extra beans or veggies.
