  • 2.25 pounds ground beef Use lean ground beef for a healthier option.
  • 1 big block Velveeta cheese Cut into cubes for easier melting.
  • 1 8 oz block cream cheese Can use low-fat version for a lighter dish.
  • 1 can cream of chicken
  • 1 can Rotel Tomatoes with chilies Use hot version for more spice.
  • 1 box bowtie noodles Can substitute with other pasta types if needed.
  • to taste cups water For boiling noodles.

Method
 

Preparation and Cooking
  1. In a crock pot on high, brown the ground beef until fully cooked.
  2. Once browned, add it to the crock pot along with the Velveeta, cream cheese, cream of chicken, and Rotel Tomatoes.
  3. Cook on high for about an hour and a half, mixing occasionally to combine all the ingredients.
  4. Meanwhile, boil the bowtie noodles in a pot of water according to package instructions until al dente.
  5. Before serving, add the boiled noodles to the crock pot and stir well. If needed, add about a cup of pasta water to thin the sauce.

Notes

Serve hot, garnished with chopped parsley or extra cheese if desired. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for 2-3 months. Reheat after thawing overnight in the fridge.
