Ingredients
  

Pasta and Seafood
  • 8 oz pasta (rotini or penne) Use any preferred type of pasta.
  • 1 cup cooked shrimp, peeled and deveined Fresh seafood recommended.
  • 1 cup crab meat Can substitute with scallops or smoked fish.
Vegetables
  • 1/2 cup chopped celery
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion For added crunch, consider bell peppers or cucumbers.
Dressing
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh dill Adds flavor to the salad.

Method
 

Preparation
  1. Cook the pasta according to package directions. Drain and rinse under cold water to cool it down.
  2. In a large bowl, combine the cooled pasta, shrimp, crab, celery, cherry tomatoes, and red onion.
Dressing
  1. In a separate bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  2. Pour the dressing over the pasta mixture and toss gently to coat all the ingredients.
  3. Stir in the fresh dill for added flavor.
Chilling
  1. Refrigerate the salad until chilled and the flavors blend, usually about an hour.
  2. Serve the salad cold with lemon wedges on the side.

Notes

To store, keep in an airtight container in the refrigerator for up to three days. Stir before serving as ingredients may settle. Avoid freezing as texture may be affected.
