Main ingredients
  • 1 tablespoon salted butter For spreading on bread
  • 2 slices rye bread Gluten-free if needed
  • 2 ounces cooked corned beef, sliced or shredded Warm
  • 2 slices Swiss cheese For melting
  • 1/4 cup sauerkraut Drained
  • 2 tablespoons Thousand Island dressing For spreading

Method
 

Preparation
  1. Spread butter on one side of each slice of rye bread.
  2. Heat a skillet over medium heat.
  3. Place one slice of bread butter-side down in the skillet.
  4. Layer with corned beef, Swiss cheese, sauerkraut, and dressing.
  5. Top with the second slice of bread, butter-side up.
Cooking
  1. Cook until bread is golden brown, then flip and cook the other side until golden and cheese is melted.
  2. Remove from skillet, slice in half, and serve warm.

Notes

Serve warm with a side of pickle spears, potato chips, or a simple salad. Add extra Thousand Island dressing on the side for dipping. Store leftovers in an airtight container for up to two days, reheat in a skillet or microwave.
