Ingredients
  

For the cake
  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee (or hot water)
For the ganache
  • 1 cup heavy cream
  • 1.5 cups semi-sweet chocolate chips
  • 1 tablespoon butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Mix well until combined.
  4. Gradually stir in the hot coffee or water until the batter is smooth.
  5. Divide the batter evenly between the prepared cake pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. While the cakes are baking, prepare the ganache by heating the heavy cream in a saucepan until it just starts to simmer.
  3. Remove from heat and add the chocolate chips and butter. Stir until smooth and glossy.
Assembly
  1. Once the cakes have cooled, spread the ganache between the layers and on top of the cake.
  2. Serve the cake at room temperature or chilled.

Notes

Make sure your ingredients are at room temperature for better mixing. Use high-quality cocoa powder for a deeper chocolate flavor. Don’t overmix the batter; mix just until everything is combined. Adjust the sweetness of the ganache by adding more or fewer chocolate chips according to your preference. Let the cakes cool completely before frosting to prevent melting the ganache.
