Preparation
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them.
- In a skillet, melt the butter over medium heat and sauté the onion and garlic until translucent.
- Add the drained sauerkraut to the skillet and stir in the paprika. Cook for 5 minutes.
- In a large bowl, combine the mashed potatoes, sauerkraut mixture, sour cream, and half of the cheese. Mix until well combined.
- Transfer the mixture to a greased baking dish and top with the remaining cheese.
- Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes or until the cheese is golden and bubbly.
- Garnish with fresh herbs if desired and serve warm.
Notes
