  • 2 cups potatoes, peeled and cubed Choose waxy potatoes for creamier mashed potatoes.
  • 1 cup sauerkraut, drained Ensure the sauerkraut does not contain any meat products for vegetarian option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice) Try different types of cheese for varied flavor.
  • Salt and pepper to taste
  • 2 tablespoons butter Melt for sautéing.
  • 1 teaspoon paprika For added flavor.
  • Chopped fresh herbs for garnish (optional) Optional for garnish.

Method
 

Preparation
  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them.
  2. In a skillet, melt the butter over medium heat and sauté the onion and garlic until translucent.
  3. Add the drained sauerkraut to the skillet and stir in the paprika. Cook for 5 minutes.
  4. In a large bowl, combine the mashed potatoes, sauerkraut mixture, sour cream, and half of the cheese. Mix until well combined.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  6. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes or until the cheese is golden and bubbly.
  7. Garnish with fresh herbs if desired and serve warm.

Notes

Serve Ultimate Comfort Food warm right out of the oven. Great as a main dish or side with grilled chicken or sausages. Can be stored in an airtight container for 3-4 days, or frozen for up to three months.
