Preparation
- Cook rice according to package instructions and keep warm.
- Season chicken lightly with salt and pepper.
Cooking
- Heat oil in a pan or wok over medium-high heat. Cook chicken for 5–6 minutes until golden and cooked through (74°C/165°F internal temp). Remove and set aside.
- In the same pan, sauté onion and mushrooms for 3–4 minutes until softened.
- Add broccoli and cook for another 3–4 minutes, stirring frequently (add a splash of water if needed to steam slightly).
- Add garlic and cook for 30 seconds until fragrant.
- Return chicken to the pan.
- Pour in soy sauce, honey, and oyster sauce; toss well.
- Stir in cornstarch slurry and cook 1–2 minutes until sauce thickens and coats everything.
Serving
- Serve hot over fluffy rice.
Notes
Cut the chicken and vegetables to similar sizes for even cooking. Use fresh ingredients for the best taste, especially the vegetables. If you like it spicy, add more chili flakes or include some sliced chili peppers. Other veggies like bell peppers or snap peas can be added for color and nutrition.
