Turkish Cheese Pide

A delightful baked cheese pie filled with rich, cheesy goodness and a golden crust, perfect for any meal.

Ingredients
  

Dough Ingredients
  • 500 g all-purpose flour
  • 300 ml warm milk Make sure the milk is warm, not hot.
  • 10 g dry yeast
  • 18 g sugar
  • 10 g salt
  • 40 ml oil Oil for the dough.
Filling and Topping
  • 250–300 g grated kashar cheese or mozzarella Feel free to adjust the amount of cheese to your liking.
  • 1 tbsp oil For brushing.
  • Sesame seeds For topping.

Method
 

Dough Preparation
  1. In a bowl, mix warm milk, sugar, yeast, and 1 tablespoon flour. Let it rest for 10 minutes until foamy.
  2. Add remaining flour gradually and start kneading.
  3. Add salt and oil. Knead well until a smooth and elastic dough forms.
  4. Cover and let it rise until it triples in size.
Shaping and Rising
  1. Divide the dough into 4 equal pieces.
  2. Flatten each piece and place a generous amount of cheese in the center.
  3. Seal tightly and turn seam side down.
  4. Gently press into a 15–18 cm round shape.
  5. Make light grid marks on top with your fingers.
  6. Let it rise again for 20–30 minutes.
Baking
  1. Mix egg yolk with 1 tablespoon oil and brush it on top.
  2. Sprinkle sesame seeds generously.
  3. Bake at 200°C (fan) on the middle rack for 18–22 minutes until deep golden.

Notes

Baked Cheese Pie is best served warm. You can enjoy it on its own or with a side of yogurt or salad for a more filling meal.
