Ingredients
  

Hibiscus Tea Base
  • 2 tablespoons dried hibiscus flowers
  • 1-2 teaspoons honey Adjust to taste for sweetness.
Drink Components
  • 8 leaves fresh mint leaves For muddling.
  • 1/2 unit lime, quartered
  • 1/4 cup mango juice
  • 1/4 cup coconut water
  • 2 ounces rum Optional for a non-alcoholic version.
  • sparkling water, for topping
  • 2 units strawberries, sliced Fresh strawberries for best flavor.

Method
 

Preparation of Hibiscus Tea
  1. Bring 1 cup of water to a boil in a medium size pot.
  2. Remove from the heat, add the hibiscus flowers and honey.
  3. Cover and let steep for 10 minutes.
  4. Strain into a pitcher and discard the hibiscus flowers.
Mixing the Drink
  1. In a tall glass, muddle the lime and mint leaves.
  2. Add a handful of crushed ice, then pour in the mango juice, coconut water, and rum.
  3. Gently mix to combine.
  4. Pour sparkling water over the top until the glass is about 3/4 full.
  5. Add the sliced strawberries and top with the hibiscus tea.
  6. Enjoy your drink!

Notes

Serve in a tall glass for a beautiful presentation. Garnish with additional mint leaves or a slice of lime. Best served fresh to retain carbonation.
