Ingredients
  

Pasta and Fresh Ingredients
  • 12 oz tri-color pasta Can substitute with gluten-free pasta if needed.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled Can be substituted with mozzarella or goat cheese.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • to taste Salt and pepper Adjust seasoning to suit your taste.

Method
 

Preparation
  1. Cook the tri-color pasta according to the package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, olives, and parsley.
Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  2. Pour the dressing over the pasta salad and toss to combine.
Toss and Chill
  1. Add feta cheese and gently mix.
  2. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Tri Color Pasta Salad is best served chilled. For a heartier meal, consider adding grilled chicken or shrimp. Leftovers can be stored in an airtight container in the refrigerator for about 3 days.
