Preparation
- Cook the tri-color pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, and olives.
Dressing
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat.
Serving
- Garnish with fresh basil before serving.
Notes
Serve chilled or at room temperature, pairs well with grilled meats. Can be stored in an airtight container in the refrigerator for up to 3 days. If pasta absorbs dressing, add a little olive oil and vinegar before serving again.
