  • 1 bag refrigerated cheese tortellini
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, cut in half
  • 1 small red onion, diced
Dressings
  • 3 tablespoons olive oil Adjust to taste
  • 2 tablespoons balsamic vinegar Adjust to taste
  • Salt and pepper to taste
  • some Fresh basil (optional) For garnish

Method
 

Preparation
  1. Cook the cheese tortellini according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked tortellini, diced cucumber, cherry tomatoes, and red onion.
  3. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  4. Toss everything together until well mixed.
  5. Let the salad sit in the fridge for at least 30 minutes to allow the flavors to meld.
  6. Add fresh basil before serving if desired.

Notes

Store any leftovers in an airtight container in the refrigerator. The salad will stay fresh for up to three days. If the dressing separates, just give it a gentle stir before serving again.
