  • 12 oz Cheese tortellini Cook according to package instructions
  • 1 cup Cherry tomatoes Halved
  • 1 cup Cucumber Diced
  • 1/2 cup Red onion Finely chopped
  • 1/2 cup Black olives Sliced
  • 8 oz Mini mozzarella balls Pearls
  • 4 oz Pepperoni slices Chopped (optional)
  • 1/2 cup Zesty Italian dressing To taste
  • 1/4 cup Grated parmesan cheese For sprinkling on top

Preparation
  1. Cook the cheese tortellini according to the package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, mini mozzarella balls, and pepperoni slices.
  3. Pour the zesty Italian dressing over the salad and toss gently to combine.
  4. Sprinkle with grated parmesan cheese before serving.
  5. Chill in the refrigerator for about 30 minutes to let the flavors meld.

Notes

You can serve this salad cold or at room temperature. It’s great for picnics, barbecues, or as a quick lunch. To store, cover tightly with plastic wrap or transfer to an airtight container; it will keep well in the fridge for up to 3 days. Toss before serving.
