Ingredients
  

For the Thai Tea Base
  • 3/4 cup Thai tea leaves
  • 4 cups hot off-the-boil water
  • 1/4 cup sugar
  • 1/8 teaspoon salt
For Thai Style Iced Tea
  • 1 1/2 Tablespoons sweetened condensed milk
  • 2-3 Tablespoons evaporated milk
For American Style Iced Tea
  • 1 Tablespoon sugar
  • 3-4 Tablespoons half and half
To Serve
  • Ice

Method
 

Preparation
  1. Steep the Thai tea leaves in hot water for 5 minutes.
  2. Strain through a fine mesh strainer.
  3. Stir in sugar and salt until dissolved.
  4. Allow to cool and store in the fridge.
Thai Style Iced Tea
  1. Mix 3/4 cup of Thai tea base with sweetened condensed milk in a mixing glass.
  2. Pour over a glass filled with ice and drizzle with evaporated milk.
American Style Iced Tea
  1. Mix 3/4 cup of Thai tea base with sugar in a mixing glass.
  2. Pour over a glass filled with ice and drizzle with half and half.

Notes

Serve cold over ice. Garnish with a sprig of fresh mint or a slice of lime. For storage, keep the Thai tea base in the fridge for up to a week. Mixed tea should be consumed immediately for best freshness.
