Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef until browned. Drain any excess fat and mix in the taco seasoning.
- In a baking dish greased with olive oil, layer half of the zucchini slices at the bottom.
- Spread the cooked ground beef over the zucchini, followed by half of the cottage cheese.
- Add the remaining zucchini slices on top, then the rest of the cottage cheese.
- Lastly, sprinkle the mozzarella and cheddar cheeses on top.
Baking
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
Serve hot with a fresh salad, tortilla chips, or top with sour cream or salsa for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
