Tex-Mex Zucchini Bake

Main Ingredients
  • 2 medium medium zucchinis, sliced Use fresh zucchini for the best texture and flavor.
  • 1 pound ground beef Can substitute with ground turkey or plant-based meat for a lighter version.
  • 1 cup cottage cheese Add on top of the ground beef layer.
  • 1 cup shredded mozzarella cheese Sprinkle on top before baking.
  • 1 cup shredded cheddar cheese Sprinkle on top before baking.
  • 1 packet taco seasoning Use gluten-free if necessary.
  • Salt and pepper to taste Season as preferred.
  • Olive oil for greasing Use for greasing the baking dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef until browned. Drain any excess fat and mix in the taco seasoning.
  3. In a baking dish greased with olive oil, layer half of the zucchini slices at the bottom.
  4. Spread the cooked ground beef over the zucchini, followed by half of the cottage cheese.
  5. Add the remaining zucchini slices on top, then the rest of the cottage cheese.
  6. Lastly, sprinkle the mozzarella and cheddar cheeses on top.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  2. Let it cool for a few minutes before serving.

Notes

Serve hot with a fresh salad, tortilla chips, or top with sour cream or salsa for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
