  • 1 lb ground beef Use lean ground beef to reduce grease.
  • 1 packet taco seasoning Follow package instructions for cooking.
  • 1 10 oz can Rotel tomatoes Use hot Rotel tomatoes for a spicier flavor.
  • 1 cup shredded cheese Cheddar or pepper jack can be used.

Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat and drain excess fat.
  2. Stir in the taco seasoning and cook according to packet instructions.
Cooking
  1. In a crock-pot, layer the cooked beef, Rotel tomatoes, and half of the shredded cheese.
  2. Repeat the layers and top with the remaining cheese.
  3. Cover and cook on low for 4-6 hours or high for 2-3 hours.
Serving
  1. Serve warm, optionally with sour cream, guacamole, or extra cheese.
  2. Pair it with tortilla chips or warm tortillas for a complete meal.

Notes

To store leftovers, let cool completely, place in an airtight container, and refrigerate for up to three days, or freeze for up to three months. Reheat in the microwave or oven.
