Ingredients
  

Dry Ingredients
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
Mix-ins
  • 1 cup roasted green chiles, chopped Can use frozen, thawed and drained.
  • 1 cup shredded cheese (cheddar or your choice) Feel free to experiment with different types.

Preparation
  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. In a large bowl, combine cornmeal, flour, baking powder, and salt.
  3. In another bowl, whisk together milk, oil, and eggs.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the chopped green chiles and cheese.
  6. Pour the batter into the prepared baking dish.
Baking
  1. Bake for 20-25 minutes, or until golden and a toothpick comes out clean.
  2. Let cool slightly before serving.

Notes

Make sure not to overmix the batter to keep cornbread light and fluffy. Customize the recipe with different vegetables or proteins.
