Stuffed Jumbo Shells

Ingredients
  

Pasta and Filling
  • 12 pieces Jumbo pasta shells
  • 1 pound Ground meat of choice (e.g., spicy Impossible ground beef)
  • 1 Onion (finely chopped)
  • 1 teaspoon Garlic powder
  • 2 tablespoons Parsley Fresh or dried
  • 1 teaspoon Oregano Dried
  • 1 teaspoon Black pepper
  • 1 cup Ricotta cheese
  • 8 ounces Cream cheese Softened
  • 1 Egg
  • 1 cup Spinach (finely chopped) Fresh or frozen
Toppings
  • 2 cups Red sauce Marinara or any preferred sauce
  • 1 cup Mozzarella cheese Shredded

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a pan, brown the ground meat. Add chopped onions and seasonings (garlic powder, parsley, oregano, black pepper) and cook until done.
  3. Set the meat mixture aside to cool.
  4. Cook the jumbo noodles until they are al dente, then rinse under cold water.
  5. In a bowl, combine the cooked meat and onion mixture with ricotta cheese, cream cheese, egg, and spinach.
Baking
  1. Pour half of the red sauce into the bottom of a baking dish.
  2. Stuff the cooked noodles with the meat mixture and arrange them in the baking dish.
  3. Add the remaining red sauce on top of the stuffed shells and sprinkle with mozzarella.
  4. Bake for 25 minutes until heated through and cheese is melted and bubbly.

Notes

Serve hot from the oven, garnished with fresh parsley. Pair with a side salad or garlic bread. If you have leftovers, let them cool, then store in the refrigerator for up to 3 days or freeze before baking for later.
