Ingredients
  

For the enchiladas
  • 8 pieces flour or corn tortillas Use flour for a softer texture or corn for a more traditional flavor.
  • 6 pieces roasted green chiles (peeled and seeded) Ensure they are roasted for the best flavor.
  • 2 cups shredded Monterey Jack or cheddar cheese Feel free to mix cheeses for a richer taste.
  • 2 cups green chile sauce Homemade or store-bought both work well.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper Adjust according to taste.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the roasted green chiles with garlic powder, onion powder, salt, and pepper.
  3. In each tortilla, place some of the chile mixture and a handful of cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish.
Baking
  1. Once all tortillas are in the baking dish, pour the green chile sauce over the top and sprinkle with the remaining cheese.
  2. Bake for 25-30 minutes or until the cheese is bubbly and golden.

Notes

Serve your Stuffed Chili Enchiladas hot from the oven, topped with extra green chiles, cilantro, or even a dollop of sour cream for added flavor.
