Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the roasted green chiles with garlic powder, onion powder, salt, and pepper.
- In each tortilla, place some of the chile mixture and a handful of cheese. Roll the tortilla tightly and place it seam-side down in a greased baking dish.
Baking
- Once all tortillas are in the baking dish, pour the green chile sauce over the top and sprinkle with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.

Serve your Stuffed Chili Enchiladas hot from the oven, topped with extra green chiles, cilantro, or even a dollop of sour cream for added flavor. They pair well with a fresh salad or some Mexican rice on the side. Store any leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave.
