  • 8 pieces flour or corn tortillas
  • 6 pieces roasted green chiles (peeled and seeded)
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 2 cups green chile sauce
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, add chopped onion, and sauté until translucent.
  3. In a bowl, mix roasted chiles with half of the cheese, onion, and a pinch of salt and pepper.
  4. Take each tortilla, fill it with the chile and cheese mixture, roll it up, and place it seam-side down in a baking dish.
  5. Pour green chile sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  6. Bake in the preheated oven for 20-25 minutes until bubbly and golden brown.
Serving
  1. Serve hot, garnished with cilantro if desired.
  2. You can garnish them with fresh cilantro, sour cream, or sliced jalapeños for extra taste.
  3. Pair them with a simple side salad or some Mexican rice to complete the meal.

Notes

Choose flavorful and ripe green chiles for the best taste. Don’t overfill the tortillas to prevent them from breaking. Feel free to adjust the cheese based on your preference; you can even mix in some pepper jack for a spicy kick.
