Preparation

- Heat olive oil in a skillet over medium heat, add chopped onion, and sauté until translucent.

- Take each tortilla, fill it with the chile and cheese mixture, roll it up, and place it seam-side down in a baking dish.
- Pour green chile sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes until bubbly and golden brown.

Notes
Choose flavorful and ripe green chiles for the best taste. Don’t overfill the tortillas to prevent them from breaking. Feel free to adjust the cheese based on your preference; you can even mix in some pepper jack for a spicy kick.
