For the cheesecake filling
  • 8 oz cream cheese, softened to room temperature Make sure the cream cheese is at room temperature for easy mixing.
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup heavy whipping cream, cold Whipped until stiff peaks form.
For assembly
  • Strawberries slices sliced strawberries Use fresh strawberries for best flavor.
  • 1 package sponge cake or ladyfingers You can use any type of sponge cake or homemade cake if preferred.

Preparation
  1. In a large bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  2. In another bowl, whip the heavy whipping cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until fully combined.
Assembly
  1. Place a layer of sponge cake or ladyfingers on a flat surface.
  2. Spread the cheesecake mixture evenly over the cake or ladyfingers.
  3. Add a layer of sliced strawberries over the cheesecake mixture.
  4. Carefully roll the sponge cake or ladyfingers to create a log.
  5. Refrigerate for at least 2 hours before serving.
Serving
  1. Slice and serve chilled, garnished with more strawberries if desired.

Notes

Wrap tightly in plastic wrap and keep in the refrigerator for up to 3 days. For longer storage, freeze before slicing.
