Ingredients
  

Crust
  • 1.5 cups crushed Golden Oreos or vanilla wafers
  • 0.25 cups unsalted butter, melted
Filling
  • 2 packages cream cheese, softened 8 oz each
  • 1 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cups strawberries, chopped use fresh for best flavor
  • 0.5 cups whipped cream

Method
 

Preparation
  1. In a mixing bowl, combine crushed Golden Oreos and melted butter. Press the mixture into the bottom of small cupcake liners to form the crust.
  2. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold in the chopped strawberries and whipped cream gently.
  4. Spoon the cheesecake mixture on top of the crust in each cupcake liner.
  5. Refrigerate for at least 4 hours or until set.
Serving
  1. Serve chilled on a nice platter or enjoy directly from the fridge.

Notes

To keep your cheesecake bites fresh, store them in an airtight container in the refrigerator for up to 3 days. You can freeze them for up to 2 months; let them thaw in the fridge before serving.
