Ingredients
  

For the Cheesecake Bites
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup crushed graham crackers
  • ½ cup white chocolate chips, melted (optional) adds sweetness and richness
For the Strawberry Crunch Coating
  • 12 pieces Golden Oreos, crushed
  • ½ packet strawberry Jell-O powder
  • 2 tbsp unsalted butter, melted

Method
 

Preparation
  1. Beat the softened cream cheese in a bowl until smooth and creamy.
  2. Add in the powdered sugar and vanilla extract. Continue mixing until well combined.
  3. Stir in the crushed graham crackers and melted white chocolate (if using) to add some sweetness and richness to the mixture.
Chill the Cheesecake Mixture
  1. Chill the cheesecake mixture in the refrigerator for 20–30 minutes to help firm it up for easy shaping.
Form the Bites
  1. Once chilled, scoop small portions of the mixture and roll them into bite-sized balls.
  2. Place the balls on a parchment-lined tray and freeze for 15 minutes.
Make the Strawberry Crunch Coating
  1. While the bites are chilling, prepare the coating by crushing the Golden Oreos in a bowl.
  2. Add the strawberry Jell-O powder and melted butter to the crushed Oreos. Mix everything until it forms a crumbly mixture.
Coat the Cheesecake Bites
  1. After the bites have chilled, roll each one in the strawberry crunch coating, pressing gently to ensure the coating sticks.
  2. Once coated, place them back on the tray and chill for another 15 minutes to set.
Serve
  1. Once the bites are chilled and the coating is firm, they’re ready to serve!

Notes

Optional white chocolate adds richness, consider swapping Golden Oreos with vanilla wafers or a different flavored Jell-O for a twist. Store in the fridge for 3–4 days, or freeze for longer storage.
