Ingredients
  

Filling
  • 8 oz cream cheese, softened Make sure it's soft for a smooth filling.
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, chopped Can use fresh or frozen; if frozen, thaw and drain first.
Pastry
  • 1 package pre-made puff pastry sheets Use a sharp knife or pizza cutter to cut into squares.
  • 1 egg beaten (for egg wash) To brush on top before baking.
  • Powdered sugar (for dusting) Add after baking.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  3. Fold in the chopped strawberries gently.
  4. Roll out the puff pastry and cut it into squares.
Assembly
  1. Place a spoonful of the cheesecake-strawberry mixture in the center of each square.
  2. Fold the pastry over to form a triangle and seal the edges with a fork.
  3. Brush the tops with the beaten egg.
Baking
  1. Bake for 20-25 minutes or until golden brown.
  2. Allow to cool slightly before dusting with powdered sugar and serving.

Notes

Serve warm or at room temperature. Great for dessert or as a snack. Pair with vanilla ice cream or whipped cream for extra delight. To store, keep in an airtight container at room temperature for up to two days or refrigerate for up to a week. Reheat in the oven.
