Ingredients
  

For the cheesecake filling
  • 6 oz cream cheese, softened Make sure the cream cheese is softened for easy mixing.
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract For added flavor.
For the quesadillas
  • 1 cup strawberries, sliced Can substitute with other fruits like bananas or blueberries.

Preparation
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over half of each tortilla.
  3. Place sliced strawberries on top of the cream cheese mixture.
  4. Fold the tortillas in half to create quesadillas.
Cooking
  1. Heat a skillet over medium heat and spray with cooking spray or melt a little butter.
  2. Add the folded quesadillas to the skillet and cook for about 2-3 minutes on each side, until golden brown and crispy.
  3. Remove from the skillet, let cool slightly, and cut into wedges.

Notes

These quesadillas are best served warm. Garnish with extra sliced strawberries or drizzle with chocolate or caramel sauce. Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat before serving.
