Ingredients
  

For the cake
  • 1 box red velvet cake mix, ingredients required on the box (usually eggs, oil, and water)
  • 1 teaspoon vanilla extract (optional)
For the frosting and filling
  • 8 oz cream cheese
  • 2 cups powdered sugar
  • 2 cups whipped cream
For decoration
  • 2 cups Strawberries sliced, for layering and decoration

Method
 

Baking the cake
  1. Preheat the oven according to the cake mix instructions and prepare cake pans.
  2. Mix the red velvet cake according to the package directions, adding the optional vanilla extract.
  3. Pour the batter into the prepared cake pans and bake according to package instructions.
Making the frosting
  1. In a bowl, beat together cream cheese and powdered sugar until smooth.
  2. Fold in whipped cream to make the frosting.
Assembling the cake
  1. Once the cake layers are baked and cooled, stack them with layers of sliced strawberries and cream cheese frosting in between.
  2. Top the last layer with more frosting and decorate with additional strawberries.
  3. Chill in the refrigerator before serving.

Notes

For the best results, let the cake layers cool completely before stacking. Store any leftover cake in an airtight container in the refrigerator. It will stay fresh for up to three days.
