Preparation
- Preheat your oven to 350°F and line a square pan with parchment paper.
- In a large bowl, whisk together the mashed bananas, cottage cheese, eggs, and honey until smooth.
- Add the oats, flour, and baking powder to the banana mixture and stir well to combine.
- Gently fold in most of the chopped pistachios, reserving a little for the top.
- Spread the batter evenly into the prepared pan and sprinkle the remaining pistachios on top.
Baking
- Bake in the preheated oven for 30 to 35 minutes, or until the cake is golden brown and set in the middle.
- Allow the cake to cool in the pan for 10 minutes before slicing.
Notes
