  • 1 cup cottage cheese Adds moisture and richness
  • 2 ripe bananas, mashed Use very ripe bananas for optimal sweetness
  • 2 eggs
  • 1/3 cup honey Sweetener for the cake
  • 1 cup oats
  • 3/4 cup flour Can substitute with a gluten-free blend
  • 1 tsp baking powder
  • 1/2 cup chopped pistachios Reserve some for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a square baking pan with parchment paper.
  2. In a mixing bowl, whisk together the mashed bananas, cottage cheese, eggs, and honey until smooth.
  3. Add oats, flour, and baking powder; stir until fully combined.
  4. Gently fold in most of the chopped pistachios, reserving some for the topping.
  5. Pour the batter into the prepared pan and spread it out evenly.
  6. Sprinkle the remaining pistachios on top of the batter.
Baking
  1. Bake for 30 to 35 minutes or until the cake is golden and set in the center.
  2. Allow to cool for 10 minutes before slicing.

Notes

This cake can be served warm or chilled, pairs well with coffee or tea. For an extra touch, sprinkle powdered sugar on top. Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Freezing slices is also possible for up to three months.
