  • ½ lb shrimp, peeled and deveined
  • 2 links spicy jalapeño cheddar sausages, sliced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • ½ cup onion, finely chopped
  • ½ cup red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 fresh jalapeño sliced
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional)
  • 1 tsp Cajun seasoning
  • 2 cups chicken broth
  • 1 cup whole milk or half-and-half
  • ½ cup shredded cheddar cheese
  • 2 tbsp soy sauce
  • 1 tbsp chili garlic paste or Sriracha
  • Salt & black pepper
Optional Garnishes
  • soft-boiled eggs
  • green onions
  • extra jalapeños

Method

Preparation
  1. Heat butter and olive oil in a pot over medium heat.
  2. Add chopped onion and diced bell pepper, sautéing until softened and fragrant.
  3. Stir in garlic, sliced jalapeño, smoked paprika, cayenne (if using), and Cajun seasoning.
  4. Pour in the chicken broth and soy sauce. Allow the mixture to simmer gently for several minutes.
  5. Reduce the heat and slowly stir in milk or half-and-half.
  6. Add shredded cheddar cheese, stirring continuously until completely melted.
  7. Adjust heat level with chili garlic paste or Sriracha according to preference.
  8. Add the ramen noodles directly into the broth and cook until tender.
Cooking Seafood
  1. In a separate pan, sear the sliced sausage until browned.
  2. Season shrimp lightly with salt, pepper, garlic powder, and paprika, then cook just until pink and juicy.
Serving
  1. Divide noodles and broth into bowls.
  2. Top generously with sausage, shrimp, and optional garnishes.
  3. Serve immediately while hot and creamy.

Notes

Lower heat before adding dairy to prevent curdling. Stir cheese thoroughly for a smooth broth. Do not overcook shrimp to keep them tender. Taste and adjust seasoning as needed.
