Preparation
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix well.
- Add the eggs one at a time, mixing well after each one. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
Baking
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Glazing
- While the cake is baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
- Once the cake has cooled, drizzle the glaze over the top and serve.
Notes
Store any leftover cake in an airtight container at room temperature for up to three days. Refrigerate for up to a week.
