Preparation
  1. Open the canned salmon and drain it thoroughly.
  2. Place the drained salmon in a mixing bowl and flake it evenly with a fork.
  3. Add the chopped onion, cornmeal, flour, mayonnaise, and egg to the bowl.
  4. Stir until all the ingredients are well blended.
  5. Shape the mixture into patties about the size of an average burger or a bit smaller.
Cooking
  1. Heat oil in a skillet over medium heat.
  2. Cook the patties in the hot oil until they are browned on each side, turning them once while frying.

Notes

Serve the salmon patties hot from the skillet. They pair well with a simple salad, coleslaw, or your favorite dipping sauce like tartar sauce or remoulade. You can also serve them on a bun as a delicious salmon burger. Store leftover patties in an airtight container in the refrigerator for up to three days or freeze for about two months.
