  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter, melted Make sure it's not too hot.
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon cinnamon
Topping ingredients
  • 1 tablespoon sugar For topping
  • 1 tablespoon cinnamon For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs, milk, and vanilla extract, mixing well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually combine the dry ingredients with the wet ingredients until just mixed.
  6. Divide the batter evenly among the muffin cups.
Baking
  1. In a small bowl, mix together the additional sugar and cinnamon for the topping, and sprinkle it over the muffins.
  2. Bake for 18-20 minutes or until a toothpick comes out clean.
  3. Allow to cool for a few minutes before transferring to a wire rack.

Notes

These muffins are best enjoyed warm. Serve with a cup of coffee or milk for a delightful treat. You can top with a little butter or cream cheese for extra flavor. Store any leftovers in an airtight container at room temperature for up to three days.
